Corbin’s Confections – Greatest Baker Semi-Finals

My dear friend Shana, the owner of the gluten/peanut/tree-nut free bakery, Corbin’s Confections, in Salem, Virginia, is in the running to be named The Greatest Baker for 2021!

The winner will be featured in Bake from Scratch Magazine, receive a year’s supply of Stuffed Puffs, and $20,000!

Winning would mean a lot to her. In Shana’s words, “Owning a food allergy bakery has always been my dream. I would like my bakery to help educate/promote celiac and food allergy awareness.” Winning – the title and the prize money – will help her to be able to spread education and awareness even more than she already does.

With great support from her customers, she has made it to the Semi-Finals. She needs to be in FIRST PLACE by 10pm (EST) tonight (24 June 2021) to move on to the next round. What is your signature bake?
I specialize in all things gluten free and nut free. However, I also assist customers with other food allergies or sensitivities.

How long have you been baking?
I began baking 20 years ago. I really got into allergen friendly baking when my mom got diagnosed with Celiac Disease and my son was diagnosed with severe food allergies.

What is your best baking secret?
Shape your gluten free dough into what you want it to look like after it is baked! Gluten free baking is completely different. You have to forget everything you knew about baking in order to master it.
